With the end of summer comes harvest and soup season! There are endless ways to enjoy the bounty of your garden and I am going to share my favourite pumpkin soup recipe. There are many different variations on how to make pumpkin soup and the one I've refined and grown to love dials down the ingredient list so it simple, light and impossible to get tired of. Pumpkin is such a delightful flavour that I wanted a soup that accentuates the pumpkin flavour and texture and didn't contain any dairy or thickeners. I'm a big fan of Greek yogurt so I always have some around if I want to add dairy to my soups.
