
This refreshing and tart spring beverage is made entirely from fresh rhubarb - no citrus required. Best of all, there's no cooking involved - just blend, strain, and sip. It's a simple, seasonal drink that captures the crisp flavour of spring.
Ingredients:

3 cups fresh rhubarb, chopped

2–3 tablespoons sugar, honey, or maple syrup (adjust to taste)

3 cups cold water

Ice and sparkling water, for serving
Instructions:

Blend:
Add rhubarb, sweetener, and water to a blender. Blend on high until smooth. -
Strain:
Pour the mixture through a fine mesh strainer or cheesecloth into a pitcher or jar. Press or squeeze to extract as much juice as possible. Discard the pulp. -
Chill & serve:
Serve over ice with a splash of sparkling water. Taste and adjust with more sweetener or water if needed.

Hi Lara, I quickly looked that up and it seems like 3 cups of rhubarb contains approximately 78 calories, 6 g protein, 0 g fat, 18 g carbohydrates, 6 g fiber, and 6 g sugar. Then of course any sweetener of your choice (which does help balance the tart flavour of the rhubarb) may add additional sugar. I have not tried this with zero-sugar sweeteners but that is something you could try out!
