This 6” long by 2” wide eggplant variety is stunning. Compact plants produce a snow-white vegetable that is perfect for fresh eating in the early summer. This vegetable has a succulent mushroom-like flavor that is delicious when added into soups, stews, and roasts. Peeling is not necessary if eaten when small, which is when flavors are the best!
Start seeds indoors at ¼“ depth 8 weeks before the last frost. Transplant outdoors once danger of frost has passed and soil is warm, in-row and between row at 18-24” apart in full sun. Using landscape fabric or black plastic can accelerate growth and productivity in cooler climates. Eggplant also requires consistent moisture.
